Who would have ever thought that two ingredients such as spinach and potatoes would go SO well together?
Spinach and Potatoes
Ingredients:One 10oz. package of spinach3 potatoes4 garlic cloves3 tablespoons of vegetable oil3/4 teaspoon salt1/8 teaspoon red pepper1 ½ teaspoons paprika1 egg
Directions:Wash the spinach thoroughly. Peel and chop the potatoes into small cubes. Peel and grate the garlic.
In a medium saucepan, add oil, spices, garlic, and the potatoes. Add enough water to just about cover the potatoes and cook for 10-15 minutes on medium heat.
Then, add the spinach to the potatoes and cover the saucepan with a so that the spinach will wilt.
After about 10 more minutes, everything should be done. Crack an egg over it, stir lightly.
