Potato Bourek using Phyllo Dough Sheets




Potato Bourek

Ingredients:

4 potatoes
mozzarella cheese
salt to taste, for the potatoes
black pepper
1 egg
1 pack of Phyllo dough sheets


Directions:

Wash and peel potatoes. Fill a medium saucepan with water and place the potatoes inside, and boil. (You can add salt to the water, OR add salt after when you're mashing the potatoes) When the potatoes are done, you can mash them in a mixer or by using a fork.

Here's how to assemble the bourek. Take a sheet and hold it in front of you so that it is wide. Then fold it in half, so it looks like the one below. Put some mashed potatoes in the center of the sheet.

Crack the egg in a bowl and beat it, with just one or two strokes.

I didn't take a picture of the next part, but you are supposed to drizzle the potatoes with some egg. Sprinkle a dash of black pepper, then sprinkle some mozzarella cheese.

Then, you fold in the right and left sides of the sheet, like this.

Next, roll it forward like this.
Fry and enjoy!
