I don't know if you know, but Costco sells some pretty amazing organic strawberry jam. It's the best strawberry jam I've ever tasted and no doubt will be the best strawberry jam you've ever tasted, if you haven't tasted it yet. I always thought my brother was weird for putting it in his peanut butter and jelly sandwiches. I just couldn't understand why anyone would use something other than grape jelly for a peanut butter and jelly sandwich. But then I tried some of it on my muffin one day and suddenly, everything made sense to me. Now I don't understand why anyone wouldn't put this strawberry jam on everything they could possibly put it on.
*Insert story about how I found this recipe while foodgawkin' and couldn't wait to try it because it called for strawberry jam and there's nothing better than finding a recipe that calls for an ingredient you already really like, because that also means one more way to enjoy that particular ingredient*
I think I did a pretty good job of summing that up. Figured I'd spare you guys all the details this time around. Plus, I've got something else I want to share with you. You see that pan up there in the second picture? That's a Wilton 8 inch square pan...and it's mine! I bought it with my own monies! ..and with a 40% off coupon of course! I finally took a stand to all the recipes that call for an 8 x 8 inch square pan and marched right on to Michael's and bought one. And then I made these strawberry honey oatmeal bars.
They were a cinch to put together. The batter was slightly sticky and tricky to pat down into the pan, but I didn't really have too much of a problem with it. What I did have a problem with was getting the sticker off my new pan. It probably would have been easier if I had realized that the sticker was on there before I put the batter in. But why would my life be easy? I sat there struggling with the sticker for forever, and then I had to sit there and struggle with the sticky residue that the sticker left behind. All the while, my preheated oven was heating up the house that was already hot from the 84 degree weather outside.
Alhamdulilah 'ala kuli haal. All praise is due to Allah in every condition. The bars managed to finally go into the oven, come out looking fab, and go into my mouth tasting spectacular. My mom said they tasted like Strawberry Nutri-Grain bars, which is sort of true, because they're chewy like Nutri-Grain bars. But they're certainly not nearly as artificial, so you know they taste way better.
I did sort of mess up on equally dividing the batter into 3/4 and 1/4, so I wasn't left with much batter to crumble on top, leaving the strawberry jam quite exposed. No big deal though. It didn't affect their perfectly soft and chewy consistency or their scrumptious taste in any way :)
Strawberry Honey Oatmeal BarsYield: One 8x8 inch pan
Ingredients:6 tablespoons unsalted butter, room temperature
1/2 cup brown sugar, packed
1/4 cup honey
1 and 1/2 cups old fashioned oats
1/2 cup all purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup organic strawberry jam
Directions:Preheat oven to 350 degrees F. Lightly grease an 8x8-inch square pan.
In a large mixing bowl, cream together butter and sugar. Add the egg and honey, mixing until blended. Stir in the oats, flours, baking soda, and salt. Batter will be slightly sticky. Using floured hands, press 3/4 of the batter into the bottom of the prepared pan. Spread strawberry jam evenly over the top. Crumble the remaining 1/4 of the batter on top.
Bake for 25-30 minutes, or until lightly browned. Allow to cool slightly in pan before serving.
