Easy Parmesan Basil Crackers



So, guess who waited till the last minute to figure out what to make for today's post? Yup. None other than yours truly. I actually started planning my posts out ahead of time a couple weeks ago, but then I started to fall behind slowly, and here I am, posting about homemade crackers because they were the easiest thing I could think of to make yesterday.


I spotted this recipe on Lauren's site a while back and the minimal ingredients and minimal steps pretty much sold me. Plus, Lauren mentioned it kept her four year old entertained for about an hour, so I thought it'd be perfect for the four year old boy I babysit. I made them with him earlier this month, using ginormous dinosaur cookie cutters (you may recall the picture I posted on Facebook), and they came out so good.


He loved his very own homemade snacks, but I think me and his mom loved them more, as we seriously could not stop munching on them. We both agreed they tasted way better than the store-bought ones.


Anyways, I remembered them yesterday and having all the ingredients on hand (another great thing about this recipe), I quickly got to baking. It took me less than an hour from start to finish to make about 3 dozen crackers. The recipe makes 12 dozen if you have mini cookie cutters, but I only had regular sized cookie cutters on hand. 


Big or small, these crackers are exceptionally flavorful and delicious. And there's a very good chance you'll find yourself hiding them from your kids so you won't have to share ;-) 
 

Easy Parmesan Basil Crackers

Yield: Approximately 12 dozen small crackers

Ingredients:

1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried basil
3/4 cup grated Parmesan cheese
4 tablespoons unsalted butter, softened
3 tablespoons heavy cream


Directions:

Preheat oven to 400 degrees F. Line two baking sheets with parchment paper, and set aside.

In a large bowl, add flour, salt, black pepper, and dried basil, and stir to combine. Stir in Parmesan cheese. Using a fork, mix in softened butter until well-incorporated and mixture resembles coarse crumbs. Stir in heavy cream, one tablespoon at a time, until mixture starts to come together into large clumps. At this point, you will need to use your hands to form the dough into a ball.

On a lightly floured surface, roll the dough out to between 1/4-1/8 inch thickness. Cut into desired sizes and shapes and place on prepared baking sheet. Prick with a fork, and bake for 10-12 minutes, or until edges turn light golden brown. Cool on baking sheets before serving.
