No Bake Peanut Butter Pretzel Bites



Well, we're back to summer weather here in Jersey, after a weekend of rain and obnoxiously cold temperatures. I suppose this should be good news, except humidity was like a million percent yesterday so...yeah. Wasn't exactly basking in it. On the bright side, the disgustingly hot weather inspired me to make these no-bake peanut butter pretzel bites, which turned out super bangin'.


Tieghan originally posted these as cookies last month, but I wanted to try something a little different. Something a little more poppable. With a little more chocolate. Poppable chocolate covered peanut butter pretzel bites it was.


Little did I know, covering things in chocolate is not as easy as it sounds or looks. Chocolate is not in fact always runny and a dream to work with. Sometimes it's thick and you have to keep rolling your peanut butter pretzel bite in it to get it completely coated and as a result, it won't be as smooth and perfect as you wanted it to be. And if you're a perfectionist like me, it will drive you crazy and you'll end up just ditching the whole chocolate coating idea and doing a simple chocolate drizzle instead.


Hopefully, you're not a perfectionist like me. Because giving up and not covering all of these in chocolate was the biggest mistake I have ever made. What was I thinking, stressing out over an imperfect coating?! I should have known they would be amazing, regardless of what they looked like! And for the record, I'm talking tastes like a Reese's peanut butter cup, sweet and salty flavor party, extra crunch from the pretzel bits type of amazing. 


AKA you need to make these right now type of amazing. Dooo ittt.


No Bake Peanut Butter Pretzel Bites

Yield: 18 balls

Ingredients:

1 cup pretzel crumbs, (make sure to leave some bits uncrushed for a nice crunch)
1/2 cup graham cracker crumbs
3/4 cup creamy peanut butter
1/3 cup honey
pinch of vanilla powder (or 2 teaspoons vanilla extract)
1/2 teaspoon cinnamon
1 cup semi-sweet chocolate chips


Directions:

In the bowl of a stand mixer, fitted with a paddle attachment (or in a bowl using an electric hand mixer), mix together pretzel crumbs, graham cracker crumbs, peanut butter, honey, vanilla, and cinnamon until combined.

Break off tablespoon sized pieces of dough and roll into balls. Place balls on a parchment paper lined baking sheet, then chill in the fridge briefly while you prepare the chocolate.

Melt the chocolate chips over a double broiler, or in a microwave. Working one at a time, dip each dough ball into the melted chocolate, roll gently back and forth to coat, then remove carefully with a fork and place on the lined baking sheet. Return to the refrigerator and chill for 30 minutes, or until chocolate coating has set.
