Enough about health stuff, back to these brownie bites. The ingredients are so simple - cocoa powder, dates, almonds and walnuts. That’s it! The result is a bite that really does taste like a brownie bite, really! The texture is there, the chewiness, and most important of all, THE CHOCOLATE. I am trying so hard not to devour these babies but it’s really hard! They are also made in a much shorter time than regular brownies which are also a plus :). As a synopsis these bites are:
I would recommend rolling them in saran wrap because boy are they sticky at first! Once they go into the fridge and set, they’re perfect. You could even roll them in chocolate chips, or coconut (yum). Best part? If it’s summer where you are, you won’t need to turn on the oven for this. Win Win!
Raw Brownie BitesYield: 16-20 bites
Ingredients:1/2 cup walnuts
1/2 cup almonds
1 cup dates (Medjool or regular), chopped
1/3 cup + 2 teaspoons unsweetened cocoa powder
1/2 teaspoon sea salt
Directions:Grind the walnuts and almonds in a food processor, until a dough starts to form. Add the dates, cocoa powder, and salt and process until incorporated and the mixture begins to turn into a dough.
Roll the mixture into round balls using the help of saran wrap, until all the mixture is finished. Place in the fridge for at least an hour, then enjoy!
