Chocolate Banana Cheesecake Chimichangas

Remember how a little less than a year ago, I discovered that I was terrible at rolling chimichangas ? Well, I can confidently say that I'm still terrible at rolling chimichangas. I would also like to add one more fact to the books, and that is, I'm even more terrible at frying them. I'm honestly terrified of frying things period, but I took a risk for this month's Mystery Dish . And while I didn't end up burning myself, I did scorch my chimichangas pretty badly. Thank goodness for powdered sugar. And the one chimichanga that managed to survive the war against hot oil by being the first one in and out of the skillet. The good news is, looks are usually deceiving, so even though these weren't rolled or fried correctly, they still tasted amazing. Because what combination of chocolate, cheescake, and banana wouldn't taste amazing? It's a match made in taste bud heaven.

Pancakes are back! It's been what, nine months since my last pancake recipe ? Yeah, definitely way too long. You guys need breakfast options! And I'm giving you what may be the best option of all today. I'm giving you pancakes that are prepared...the night before! Yes, you read that correctly. The batter stays in your fridge overnight to develop and what not. And then you can roll right out of bed the next morning, turn your skillet/griddle on, and get to cooking. How amazing does that sound? And that's not all. With that extra time you have on your hands from not having to find/mix all your pancake ingredients in the morning, you can make the most delicious Nutella syrup, which complements these moist and fluffy pancakes fantastically, if I do say so myself.

Guess who finally bought a donut pan? Yours truly! But I didn't get just any donut pan. I got a MINI donut pan. Why? Because it's automatic portion control. Also, mini desserts have been scientifically proven to be more delicious than their regular-sized counterparts. It's true. I don't make this stuff up people. Also on the way to being scientifically proven is chocolate desserts being significantly more delicious than non-chocolate desserts. As a chocoholic, I have complete expertise in this field. However, they may need a non-biased person to perform the study. I have no doubt those findings will be released soon though. In the meantime, I'll be enjoying more chocolatey desserts like these double chocolate donuts. Yes, double chocolate. Because just chocolate is NOT enough for me. My mom thinks I have a serious problem. PROBLEM? This is a blessing. Chocolate is the best thing to happen to my life.

Well, I'm at it again folks. Covering vegetables up with cheese so I can get myself to eat them...kind of. Okay, so I actually already love broccoli. It's one of the few vegetables that I can devour on it's own. But I covered it up with cheese anyway, because hello, broccoli and cheese. They're soulmates. You don't even have to bake them into anything. You can literally just eat broccoli with cheese and it would be the most delicious thing ever. BUT, if you're trying to be fancy, or you need to sneak some broccoli into your kid's diets, yada yada, you can bake them into these fabulous patties.

I know this has probably been said a million times this week, but I'm going to say it again anyway. Snow, you have officially overstayed your welcome. Like, it's not even cute anymore. Are you red-velveted out yet? My family is. They'll be just fine not seeing another red velvet dessert for the next year. My mom in particular is grossed out by the bright, bloody color and annoyed by how it stains everything within a five mile radius. I promised her that this would be the last red velvet recipe for a while. Well, I went out with a bang, because my dear mama LOVED these rolls. I had her taste them when I took them out the oven, and before I could ask her if she liked them, she was helping herself to seconds...and then thirds. Her favorite part: the cream cheese frosting. I don't blame her, it is pretty fabulous. I use it on my classic Cinnabon cinnamon rolls too. But let's take a look at what makes up the rest of these rolls. The rolls themselves are made out of...wait for it....cake mix! Yes, not only can you make cookies out of cake mix, but you can also make cinnamon rolls. #MINDBLOWN. Red Velvet White Chocolate Cheesecake Bars

Lately, I've been really starting to get in touch with my creative side when it comes to baking. Where I once used to be afraid to change anything in a recipe, I now think of all the ways I could put my own twist on it. I am even starting to create my own recipes thanks to a little nudge from Mystery Dish . I gotta say, I love this side of me! It has sparked a continuous flow of creative juices, so much so that I now have to stop and write my ideas down because they literally pop up anywhere, at any time. It's been great. The idea for these bars came to me a while back when I made these red and white velvet cookies . The first time I attempted the cookies, they came out crispy instead of chewy. Crispy like graham-crackers. Crispy like they should be ground up and used like a graham cracker crust...with a white chocolate cheesecake. Because what complements red velvet better than white chocolate and cheesecake, right?

Now that the Super Bowl has come and gone, all focus will turn to the big 14th of February. Which means prepare yourself for the red and pink overload that will soon take over the interwebs. I admit, I do have one or two desserts planned within that color scheme. But I've decided to take it easy on your eyes today, and give you something a little mellowed out.  Ladies and gents, meet my hazelnut linzer cookies. Similar to my original melt-in-your-mouth linzer cookie , except I've added hazelnuts and cinnamon to the dough. And sandwiched them with Nutella. What better way to show your spouse how much you love them than by adding some Nutella to their menu? I mean, we all know Nutella is EXTREMELY hard to share, so making these would be a true act of romance. But forget Valentine's Day for a second.
