Strawberry Banana Pancakes #OXOCookware



So, who went to IHOP yesterday and got themselves some free pancakes?!

Not me.

I wanted to go and I have went every year since I've heard about said glorious day, but this year, I had to sit it out due to previous obligations. No worries though, because instead of going to IHOP, I brought IHOP to me.

And no, I'm not talking about delivery. Because that amazing service doesn't exist yet. But you know what does exist? OXO's brand new 11-inch square griddle that makes amazing pancakes.


Oh boy, was I excited to get my hands on this pan! My pancake making experiences have been subpar due to my sorry excuse for a non-stick skillet. And as many times as I make pancakes, I don't need any sorry excuses. I need the perfection that is this griddle.


I promise, I'm not being paid to say any of this. I am just truly obsessed with this pan. And let me tell you why. First of all, there was not a single speck of pancake left on the pan when I was done cooking. Not one. So to clean the pan, all I had to do was just wipe it off with a moist towel!

Secondly, do you see the gorgeous even browning on my pancakes? Yes, that's compliments of the heavy gauge anodized aluminum this pan is made of.


But these pancakes don't just excel in the looks department, they are bomb dot com in the flavor department as well. Of course, that part is thanks to my culinary genius! Kidding! This is just a basic buttermilk pancake recipe, amped up with mashed banana and sliced strawberries. The topping takes these to another level though. Between the macerated strawberries, fresh sliced bananas, and freshly whipped cream, you will find yourself on cloud nine.

Strawberry Banana Pancakes

Yield: 4-6 pancakes

Ingredients:

1/2 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup buttermilk
1 egg
1 teaspoon vanilla extract
1/3 cup mashed ripe banana
1/2 cup sliced strawberries

Directions:

Preheat griddle over medium-low heat.

In a medium-sized bowl, whisk together flours, baking powder, and salt. Set aside.

In another bowl, whisk together buttermilk, egg, and vanilla until well-combined. Pour in dry ingredients and stir until just incorporated. Stir in mashed banana. Fold in sliced strawberries.

Lightly spray griddle with non-stick cooking spray. Pour a scant 1/2 cup of batter onto heated griddle and immediately spread it out with the back of a ladle or spoon to form an even, circular shape. Cook until bubbles appear on the surface and edges are set. Carefully flip over and cook on the other side until golden brown and cooked through. Repeat with remaining batter.

Serve warm with freshly sliced bananas, strawberries,and whipped cream.
