Chicken Caprese Burgers



Happy Wednesday everyone! How was your Memorial Day weekend? The weather could not have been more perfect for us here in Jersey. We had a great time outdoors and one of the highlights of our weekend was grilling up these delicious chicken burgers!


We're huge fans of chicken in my house so you definitely won't find a shortage of chicken recipes on this blog. I'm always looking for different ways to cook chicken breast, and discovering chicken meatballs was one of the greatest things to ever happen to me. This weekend, I took it one notch further and made burgers! And because I LOVE Italian food so much, I added an Italian twist.


With a beautiful basil leaf, a slice of ripe tomato, and a slice of fresh mozzarella cheese, these are instantly transformed into caprese burgers! Can you even?

Biting into this was seriously heavenly.  I seasoned the chicken with more fresh basil, garlic, onion powder, and gave it a spicy kick with some crushed red pepper flakes. No lack of flavor here! I'm already counting the seconds until I make these again :-D

Chicken Caprese Burgers

Yield: 8 sliders

Ingredients: 

1 pound ground chicken breast
3 tablespoons whole milk
1 large egg
1 cup italian seasoned panko bread crumbs
1 tablespoon fresh basil, very finely chopped
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes

fresh mozzarella cheese, thinly sliced
fresh ripe tomatoes, thinly sliced
fresh basil leaves
8 slider buns

Directions:

In a medium-sized bowl, mix together ground chicken, milk, egg, bread crumbs, basil, salt, garlic powder, onion powder, black pepper, and red pepper flakes until well-combined and all ingredients are evenly incorporated.

Preheat grill to medium-heat and place a sheet of aluminum foil over grill grates. Spray aluminum foil with non-stick cooking spray, then make slits in the foil with a knife.

Shape ground chicken mixture into small patties. Place patties on top of aluminum foil and cook for 5-7 minutes on both sides.

Prior to removing from the grill, place a slice of mozzarella cheese over each patty, top with a slice of tomato and fresh basil leaf. Cook for another minute or until mozzarella is melted, then place patties in slider buns and serve immediately.
