Oh yes. It's s'mores season errybody. Or, at least, I'm declaring that it is. I know it's not summer quite yet, but the 77 degree weather we had yesterday definitely felt like it was. I kind of feel like we're skipping right over spring this year. The weather just went from really cold to really hot, and nothing in between. I would complain, but the warmer weather encouraged me to make these Nutella s'mores bars, so you won't hear a peep from me.
I've had these bars bookmarked for the longest time ever. You might think it's silly why I took so long to make them, but, it's because I was always waiting for Nutella to go on sale. Yes, I am one of those people who doesn't buy what I need, I buy what's on sale. And I mean, really on sale. Cause sometimes the stuff in those circulars are not actually on sale; they just use big letters and fancy colors to make you think you're getting a deal but you're not. My parents taught me well :)
Ironically, I didn't end up using actual Nutella for these bars. I used a store brand chocolate hazelnut spread that I happened to already have on hand and only because my mother insisted that I suck it up and just use it because they're all the same thing. And guys, let me tell you, I have never been more glad to listen to my mom.
These bars are the bomb diggity. I am apalled at how long it took me to make them. What was I thinking!? Ok, I know what I was thinking, but seriously, dumb move. Dumbbb moooove. First of all, the dough is like, phenomenal. I'm pretty positive I ate half of it. Maybe more than half. I'm not sure. All I know is that by some miracle, I ended up having enough for the top and bottom layers. And thank goodness, because the dough was a gazillion times more delicious after it was baked.
It was so soft and chewy, and combined with the melty marshmallow creme and generous layer of Nutella plus the extra chocolate chips...mmmmm, absolutely ah-may-zing. I tried really hard to limit myself to two pieces but I just could not resist. So as a fair warning, do not make these if you are trying to get ready for wedding season, or bikini season, or any kind of season where you need to lose weight. You may tell yourself moderation is key, but you'll throw the key out the window and dive face first into these bars if they're in front of you. Trust and believe it.
Nutella S'mores BarsYield: One 8x8 pan (16 squares)
Ingredients:1 and 1/4 cups flour
1 cup graham cracker crumbs
1/2 teaspoon baking powder
1/8 teaspoon salt
1 stick unsalted butter, softened
3/4 cup packed brown sugar
1 large egg
pinch of vanilla powder (or 1 and 1/2 teaspoons vanilla extract)
1/2 cup Nutella
7 ounces marshmallow creme
1/2 cup semi-sweet chocolate chips
Directions:Preheat oven to 350 degrees F. Spray an 8x8 glass baking dish with cooking spray, then line with parchment paper, leaving an overhang on opposite sides.
In a bowl, whisk together flour, graham cracker crumbs, baking powder, and salt. Set aside.
In another bowl, cream together butter and brown sugar. Add egg and vanilla and beat until creamy and well blended. Add dry ingredients and beat until just combined.
Press half of the dough evenly onto the bottom of the prepared baking dish. Spoon marshmallow creme over the dough, then use the back of a greased spoon or a greased angled spatula to spread it out. Spread Nutella over marshmallow creme. Sprinkle chocolate chips over Nutella. Break apart chunks of the remaining graham cracker dough and scatter on top of the chocolate chips, like so.
Bake for 30 minutes or until golden brown. Let cool completely in pan, then lift out using overhanging edges of parchment paper and cut into bars.
