Happy New Year! I hope you all like the new blog design, I decided to go with something simple, yet elegant. I know it has been a while since my last post but I assure you that I have not abandoned you :)
This year, we are starting off with none other than the basic chocolate chip cookie. Like many, I had a hard time finding a chocolate chip cookie recipe that actually worked and gave me good results every time. I was sick and tired of my cookies coming out too flat, or too hard, etc.
So I did some searching, read some reviews, and alas, I found the PERFECT recipe. I named them my PAB chocolate chip cookies, positively-absolute-best. And indeed they are.
Positively Absolute Best Chocolate Chip Cookies
Ingredients:12 tablespoons unsalted butter, melted and cooled until warm1 cup packed brown sugar(dark or light)1/2 cup granulated sugar
1 large egg1 egg yolk, from a large egg2 teaspoons vanilla extract2 cups all-purpose flour2 tablespoons all-purpose flour1/2 teaspoon baking powder
1/2 teaspoon salt
1 and 1/2 cups semisweet chocolate chips (I only used one cup)
Directions:Place oven racks in the upper and lower 1/3s of the oven.Preheat oven to 325 degrees.
Mix butter and sugars with a mixer until blended and smooth.
Add egg, yolk, and vanilla. Mix until incorporated.
Add dry ingredients and mix until just combined. Stir in chips.
Divide into 18 equal balls. (I made my cookies much smaller, so I made twice as much cookies)
Bake for 15-18 minutes, rotating front to back, and top to bottom after 8 minutes. ( I baked them for 13-14 minutes. Switching the cookie sheets from the bottom rack to the top rack, and rotating them from front to back is essential so that the cookies get cooked all around and they don't burn.)
