Tomato and Pepper Bourek

Ingredients:

For the dough:
3 cups flour
1/4 cup vegetable oil
1/4 teaspoon salt
3/4 cup water for forming the dough, but it might take less than this

For the filling:
1 large tomato, chopped
2 cups of green peppers
2 garlic cloves
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons olive oil
1 small hot green pepper or 1/8 teaspoon of hot ground red pepper


Directions:

For the dough
Put flour, oil, and salt in a bowl. Combine ingredients lightly by gently running your hands through the mixture. Then, add water gradually, and knead with your hands until you form a soft dough.

For the filling: 
Wash and cut tomatoes into very small cubes. Grill green peppers until blackened. After grilling, the charred skin will slip off easily. Cut the peppers into small strips. Cut the hot green pepper into small circles. In a saucepan, add oil, tomatoes, garlic, and spices, and saute until the tomatoes are mushy. Then, add the green peppers, and stir for about 5-10 minutes or until the water dries up. Then take it off the heat and let it cool before filling it in the pastries.

Portion out the dough into small balls. Roll the balls out to form small circles or roll them out and use a large circle cookie cutter. Put some filling on the end closest to you and roll the dough over the form a crescent. Use your fingers to firmly press around the crescent and seal the dough. Then use a zig-zag pizza cutter to cut through the part where the dough is sealed. Fry and enjoy!
