Black Bottom Cupcakes



With a show of hands, how many of you would have rather me posted banana-zucchini muffins, rather than these black bottom cupcakes? I'm gonna assume the number of hands in the air right now is very low. That way I don't feel guilty about using the bananas I had to make these cupcakes instead of making another batch of banana zucchini muffins so I could photograph/post about them like I had planned to do.



What can I say, chocolate makes plans change. Especially when cream cheese and bananas are added to the mix. I had no choice but to put up my white flag and surrender, and leave the healthy recipes for another day. Stuffing my mouth with cheescakey-chocolatey-banana goodness, on the other hand, was something that could not wait.


I've seen recipes for black bottom cupcakes before, but none like this one. Leave it to Bakerella to throw in some pureed bananas and make these cupcakes 100x more appealing than the original. I was practically drooling at the screen the moment I laid eyes on them. Side note: pictures of melted chocolate chips automatically make things more appealing. But I'm no stranger to the delectable chocolate-banana combination either. I've had it quite a few times, even in cheesecake itself. So I knew ahead of time that these babies would be nothing short of amazing.



And I wasn't wrong. They were spectacular. Mouthwatering. Tongue-tantalizing. Greed-inducing. Did I mention they were greed-inducing? Any other day, I would have loved to offer my nephews all of the baked goods in the world. And I did in fact let them have one of these cupcakes each. But then they started asking for more and I wasn't having it. The second I saw them inch closer to the rest of the cupcakes, I went into complete momma bear mode, protecting my cubs from the intruders.

In my defense, I only had enough cream cheese to make half a batch of cupcakes. And taste-testing requires multiple tests, ya know, so that an accurate evaluation is provided. Okay fine, I admit, I'm always going to be a fat child on the inside. My brother told me that the other day and I'm starting to see how valid his point is more and more each day.



But cut me some slack, these cupcakes will make you a fat child even if you aren't. If you're not grinning from cheek to cheek, mouth and fingers covered in chocolate, asking for more after just one bite, then you're either not human or you're some kind of health freak who's into portion control and all that weird stuff. JAYKAY, I love health freaks. But do me a favor? Treat yourself to these cupcakes on your cheat day. I promise you won't regret it.

Black Bottom Cupcakes

Yield: 18 cupcakes

Ingredients:

For the cream cheese mixture
8 oz cream cheese, softened
1/2 cup sugar
1 small banana, pureed
1 egg
pinch of vanilla powder (or 1 tsp vanilla extract)
8 oz. semisweet chocolate chips

For the chocolate mixture
1 and 1/2 cups all purpose flour
1/3 cup cocoa powder
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large bananas, pureed
1/3 cup oil
pinch of vanilla powder (or 1 teaspoon vanilla extract)


Directions:

Preheat oven to 350 degrees.

Using a hand mixer, beat cream cheese and sugar until nice and fluffy. Add pureed banana, egg, and vanilla, and mix together until combined. Stir in chocolate chips and set aside.

Sift together flour, cocoa powder, sugar, baking soda, and salt. Add pureed bananas, oil, and vanilla to the dry ingredients and mix together on low speed until combined.

Fill cupcake liners with a scoop of the chocolate batter. Then top the batter with the cream cheese mixture. Bake for about 25 - 30 minutes.
