Quinoa Pizza Bites



As a rule of thumb, I only like to post recipes on here that I absolutely love. Anything ranging from "this is really good" to "omg I need to eat this every day, you people need to make this right now" will almost always make the cut. However, there are times that I make something that I'm not really crazy about, but I don't want to not post it because I realize that everyone has different tastes. So, what might not have necessarily cut it for my taste buds, might actually be really enjoyable for yours.


Enter these quinoa pizza bites. In an effort to eat healthier (as per my doctor's orders), I decided to give them a shot over the weekend. I never tried quinoa before but I figured if I was going to eat it and enjoy it, it would probably have to be covered in lots of sauce and cheese.

When I was cooking the quinoa before mixing it in with the ingredients for the bites, it smelled pretty good, so I was hopeful. But after having a couple of the finished bites, and even making two more batches testing different amounts of spices, I just couldn't bring myself to say that I enjoyed them.


Now, I'm not saying they're bad. They did have a wonderful flavor to them, and the little chunks of mozzeralla were great, as well as the complementing pizza sauce. But they just weren't my thing. And that's probably largely due to the fact that I'm not used to the texture/taste of quinoa. However, I won't write this recipe off just yet because I did eventually come around to liking unsweetened almond milk and I do currently eat brown rice without gagging, so with some time and seasoning adjustments, we may have some potential here. 


As for all you quinoa lovers reading this, this recipe is right up your alley and I have no doubt you'll be adding it to your weekly rotation. I didn't mention this earlier but my nephews eagerly devoured all the bites I brought over for them to taste-test, as well as all the ones that I had left over in my house when they came to visit. So, these are definitely very kid-friendly and way better than the pizza bites in the frozen section of your local supermarket. Also, I think they'd make really great party appetizers (football season needs to start already!).

Quinoa Pizza Bites

Yield: 12 mini muffin sized bites

Ingredients:

1 cup cooked quinoa (1/4 cup dry quinoa will yield 1 cup when cooked)
1/4 cup chopped onion
1 large garlic clove, minced
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon paprika
1/4 teaspoon salt
1 egg
1/2 cup cubed mozzarella
pizza sauce, for dipping

Directions:

Preheat oven to 350 degrees F. Grease a mini muffin tin with nonstick cooking spray and set aside.

In a medium sized bowl, mix together cooked quinoa, onion, garlic, basil, oregano, paprika, salt, and egg. Stir in mozzarella cubes.

Spoon mixture evenly into 12 muffin cups, filling each cup to the top and pressing down gently with a spoon to compact.

Bake for 18-20 minutes or until edges are golden brown. Serve warm with pizza sauce.
