No-Bake Chewy Granola Bars



As made obvious by my last few posts, I've been on a no-bake kick lately. And as you can tell from the title of this post, the kick continues. You see, I have recently discovered that not only are no-bake desserts great for when it's too hot to turn your oven on, but they're also super simple to make and always have exceptionally delicious results. So, this no-bake trend just might carry on throughout the winter months. I'm so serious.



This recipe in particular will definitely be frequenting my kitchen for the rest of eternity. Allow me to introduce you to the holy grail of granola bars. A darn near perfect replica of the ever so popular Quaker Chewy granola bars. You will not be able to believe your taste buds. I certainly couldn't. 




It's not just that they taste exactly like the ones I've been buying for years. It's that all this awesomeness takes literally less than 10 minutes to make. And the ingredients are all basic items that you're guaranteed to have in your pantry. No soybean oil, dried coconut, malted barley extract, none of that. Just brown sugar, honey, butter, Rice Krispies, quick oats, vanilla extract, and chocolate chips. That's all you need.



You do have to wait an hour or two for them to cool so that you can cut them into bars, but if you put on this week's episodes of MasterChef, those two hours will fly by in no time!

No-Bake Chewy Granola Bars

Yield: 10 bars

Ingredients:

4 tablespoons (1/4 cup) unsalted butter
1/4 cup honey
1/4 cup packed light brown sugar
2 cups quick oats
1 cup Rice Krispies (or any crispy rice cereal)
pinch of vanilla powder (or 1/2 teaspoon vanilla extract)
3 tablespoons mini chocolate chips

Directions:

Lightly spray an 8x8-inch pan with non-stick cooking spray and set aside.

In a large bowl, stir together oats and Rice Krispies. Set aside. 

In a small saucepan, melt together butter, honey, and brown sugar over medium heat. Bring to a boil, then reduce heat and simmer for 2-3 minutes. Remove from heat and stir in vanilla.

Pour melted butter mixture over dry ingredients, and stir together with a wooden spoon until everything is evenly moistened.

Press mixture firmly and evenly into prepared pan, making sure to really pack everything in nice and tight. Sprinkle on chocolate chips and press down lightly to adhere.

Let cool at room temperature for two hours before cutting into bars. 

Note: If your bars crumble apart when you cut them, just stick them in the fridge for 15 minutes and they'll harden up. Make sure you don't leave them in there for too long though!
