Ever since making this amazing four-ingredient fudge a month ago, I've been brainstorming other flavors I could transform it into. Well, when the folks over at Smart Balance contacted me and asked if I could create a recipe for them using their All-New Natural Dark Chocolate Peanut Butter Spread, they instantly switched on the light bulb over my head. Peanut butter banana fudge. It was brilliant.
Who doesn't love peanut butter and bananas? Even Elvis loved peanut butter and bananas! It was his favorite flavor combo and that's probably one of the reasons why it's so popular today. Unfortunately, Smart Balance wasn't around when Elvis was. If it was, it would have probably made his beloved peanut butter and banana sandwiches a lot more healthier!
You see, Smart Balance doesn't have any hydrogenated oils in their peanut butter, nor does it have any trans fats. But you know what it does have? Omega 3-s! 320 mg in each serving, to be precise. And unlike most peanut butters that are sweetened with gross amounts of high fructose corn syrup, Smart Balance sweetens it's peanut butter naturally, with molasses and dried cane syrup. All of these would have definitely kept a few pounds off Elvis, wouldn't you say?!
But enough about Elvis, let's talk about this incredible melt-in-your-mouth fudge. This outrageously easy, outrageously delicious good-for-you fudge. It's only got four ingredients, all of which you can pronounce. Coconut oil. Bananas. Honey. And of course, this creamy dark chocolate peanut butter spread that Smart Balance most graciously sent me. Combined, they create the most delectable fudge I have ever tasted. And nobody is paying me to say that, I promise!
It's so smooth and creamy and all the flavors are perfectly balanced. I love the touch of sweetness from the banana and the honey, and the hint of chocolate from the peanut butter spread. But what I'm really obsessed with is coconut oil and it's ability to firm up the fudge, but then allow it to be so soft and delicate at room temperature. It is the key to making the best fudge y'all. You have to try it and you absolutely positively have to try this fudge!
Peanut Butter Banana Fudge
Yield: 9 squares
Ingredients:
1/2 cup melted coconut oil
1/3 cup Smart Balance Dark Chocolate Peanut Butter, melted
1/3 cup mashed banana
1/4 cup honey
Directions:
Line a 6x6-inch freezer safe container with plastic wrap, extending it well beyond the edges on all four sides. Set aside.
In a small bowl, add coconut oil, peanut butter, mashed banana, and honey. Using an immersion blender, blend together ingredients until smooth and well-combined. Pour mixture into prepared container. Transfer to freezer, and freeze for 20 minutes, or until firm.
Cut into squares and serve immediately, or store in refrigerator until ready to eat.
