Baked Broccoli & Cheese Patties



Well, I'm at it again folks. Covering vegetables up with cheese so I can get myself to eat them...kind of. Okay, so I actually already love broccoli. It's one of the few vegetables that I can devour on it's own. But I covered it up with cheese anyway, because hello, broccoli and cheese. They're soulmates.


You don't even have to bake them into anything. You can literally just eat broccoli with cheese and it would be the most delicious thing ever. BUT, if you're trying to be fancy, or you need to sneak some broccoli into your kid's diets, yada yada, you can bake them into these fabulous patties.


You only need a few extra simple ingredients: onions, garlic, panko breadcrumbs, Parmesan cheese, and eggs. No need to even make a trip to the grocery store. These are super easy to whip up, and super easier to devour. I love that line. If you're a regular around here, you know that it appears on my blog often. What can I say though, it's the truth!


I mostly apply it to desserts, but every now and then, a side dish comes along that is worthy of the phrase. So yeah, I would definitely double this batch if I were you. Trust me on this one.

Baked Broccoli & Cheese Patties

Yield: 12 patties

Ingredients:

2 teaspoons vegetable oil
2 cloves garlic, minced
1/2 cup chopped onion
1/4 teaspoon salt
1/2 teaspoon black pepper
One 12oz bag frozen broccoli, thawed
3/4 cup panko breadcrumbs
3/4 cup sharp cheddar cheese
1/3 cup Parmesan cheese
2 eggs, beaten

Directions:

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.

In a skillet over medium heat, add oil, garlic, onions, salt, and pepper, and sauté until soft and translucent. Remove from heat and set aside to cool.

Using a kitchen towel, squeeze out as much water as you can from the broccoli.  Place broccoli in a medium-sized bowl. Add onion mixture, breadcrumbs, cheddar cheese, Parmesan cheese, and eggs. Stir together until well-combined.

Form the mixture into patties, using about 2-3 tablespoons for each patty. Place on prepared baking sheet. Bake for 10 minutes on each side, or until crispy and golden brown.
