No-Bake Snickers Pie



You guys, we had such a cruel winter this year that 60 degrees feels like a blessing and 80 feels like we're dying. Literally. I went to a picnic at the park on Mother's Day and thought I might actually pass out from the heat and it was only around 82 degrees.

There is an upside to this though. Because it's so hot, humid, and sticky outside, I am allowed to start posting no-bake desserts that require barely any effort to make! What may have previously been considered "lazy", is now considered "seasonal"! :-P

I have had this pie bookmarked for five-ever and I'm deeply saddened that it took me this long to try it because it's probably one of the best things to ever happen to my taste buds. Literally, the coolest, creamiest, airiest, delicious-est no-bake pie you'll ever have the pleasure of tasting. I mean, it's Snickers inspired for crying out loud. That should say enough.

But if you needed me to say more, there is an Oreo crust involved, along with dulce de leche, chopped Snickers bars, peanuts, Cool Whip, cream cheese---all things that taste amazing on their own so imagine the flavor bomb they are when combined?

No-Bake Snickers Pie

Yield: One 9-inch pie

Ingredients:

One pre-baked Oreo cookie crust, storebought or homemade
8 oz. package cream cheese
1 cup powdered sugar
1/2 cup dulce de leche
8 oz. tub Cool Whip
3 Snickers bars, chopped
1/4 cup peanuts
1/4 cup semisweet chocolate chips, melted, for drizzling

Directions:

Spread two tablespoons dulce de leche over the bottom of pre baked crust. Sprinkle half of the chopped peanuts and one chopped Snickers bar over the dulce de leche.

In the bowl of a stand mixer, fitted with a whisk attachment, beat together cream cheese and sugar until smooth and no lumps remain.  Add 1/4 cup dulce de leche and beat until incorporated. Add Cool Whip and beat until fluffy and well-combined. Fold in one chopped Snickers bar.

Spread mixture evenly over crust. Dollop remaining two tablespoons of dulce de leche and swirl in with a knife. Sprinkle remaining chopped peanuts, remaining chopped Snickers bar, and drizzle with melted chocolate.

Refrigerate for at least one hour before serving.
