Happy 2018 everybody! It's been 2018 for two weeks now and I must admit, 2018 has me feeling pretty uninspired in the kitchen. Forget about baking, meal planning for the week has even been a struggle. The same meals have been in rotation for a while now and I need some new ideas!
These cookies are actually one of the regulars at my house, but I decided to spruce them up a bit and share the recipe so I don't leave y'all hanging for too long without some fresh content! Now that I think about it, it's actually the perfect time to share these with you all because they're so diet-friendly since they're paleo and don't have any refined sugar. They are the ultimate guilt-free chocolate chip cookie in my opinion.
The ingredients are simple and so is the process. The original recipe comes straight from the healthy baking queen herself, Monique of Ambitious Kitchen. I could not have found a more perfect cookie base to work with. Consistency wise, they are the bomb dot com, especially if you love thick, soft, and chewy cookies like me. I played with the measurements a bit to account for the addition of cocoa powder, but other than that, I kept mostly everything the same.
Take a look at this money shot. Puddles of melted chocolate. Soft, brownie-like interior. It's too much to handle. By the way, forget chocolate chips. Get yourself a high quality chocolate bar and chop that thang up. You'll never go back to ordinary chocolate chips again.

Paleo Double Chocolate Chunk Cookies
Yield: 12 cookies
Ingredients:
1 egg, slightly beaten
1 teaspoon vanilla extract
1/3 cup coconut oil, melted
1/2 cup coconut sugar
1 cup almond flour
3 tablespoons raw cacao powder
2 tablespoons coconut flour
1/2 teaspoon baking soda
3 oz. bittersweet chocolate chunks
Directions:
Line a cookie sheet with parchment paper. Preheat oven to 350 degrees F.
In a medium-sized bowl, whisk together egg, vanilla extract, coconut oil, and coconut sugar until well-combined. Add almond flour, cacao powder, coconut flour, and baking soda. Using a rubber spatula, fold the mixture until it forms into a soft dough.
Fold in chocolate chunks. Using a cookie scoop, scoop out balls of dough onto lined cookie sheet.
Bake for 10 minutes. Transfer to a wire rack to cool completely.
