Strawberry Coconut Lime Popsicles


Y'all, I've officially broken out the popsicle maker. It's about that time. Time for refreshing, no-bake treats that are so easy to make, you'll want to make them every day. And since I know many of you are going to ask, this is the popsicle maker I use. It's amazing, and has never failed me.
When it comes to popsicle making, the varieties are literally endless and it is super adaptable to your diet or lifestyle plan. I was recently on a 21 day cleanse (shoutout to Simple Green Smoothies) which  consisted of me avoiding sugar, dairy and animal-based products. And let me tell you, I used A LOT of coconut milk. A lot. In my cooking, in my smoothies, and in my popsicles. Yes, I was allowed to have popsicles. #bestcleanseever
And so, I was inspired to create for you my very own dairy-free and refined-sugar free popsicles. It is strawberry season in Ohio right now, so of course, I had to go to my local farmer's market and get me some. My coconut milk was a little grainy(I used a generic brand) and it shows in the popsicles but you know what, they still tasted darn good.

I almost didn't post them because my perfectionist self was not one hundred percent satisfied with the way they looked. But, I worked my photoshop magic to get them to a standard I was content with. And voila!
Side note- I garnished these with lime zest for the photos but when I ate one afterwards, I realized the lime zest added the perfect extra zing of flavor. So, do do this extra step! Especially if you are making these for a party; your guests will thank you!

Strawberry Coconut Lime Popsicles

Yield: 10 popsicles

Ingredients:

One 13.5 oz can full-fat coconut milk
3 oz. coconut cream
10 medium strawberries
Juice of 1 lime
3 tablespoons maple syrup
Zest of 1 lime

Directions:

Add all ingredients except lime zest to a blender and blend until completely smooth. Scrape down blender and taste. If mixture is not sweet enough to your liking, add additional tablespoon of maple syrup or other sweetener of your choice. (Remember, the sweetness will mellow once the popsicles are frozen, so make sure you add more than what normally tastes "sweet" to you.)

Stir in lime zest. Distribute mixture between popsicle molds. Freeze for 6 hours, best if overnight.

To remove popsicles from mold, simple run each mold under warm water for a few seconds. Squeeze the mold and gently pull upward; the popsicle should slide out. Garnish with additional lime zest, if desired.
