Easy Flavorful Chicken Fajitas

Easy Flavorful Chicken Fajitas

I recently thought about going on a raw food diet. But then I remembered how much I love chicken. I really love chicken, guys. My family does too. So much so that we buy our chicken wholesale from Restaurant Depot. We actually have to pre-order it since it's halal chicken and not always available, and the few days or weeks that go by without chicken in the house is truly a miserable time for us. So yeah, no raw food diet for me any time soon. Actually, I plan on making these chicken fajitas every day for the next week because they are SO GOOD. I don't really dabble in Mexican food much. I've never been to Chipotle. The closest I've gotten to Mexican food is Taco Bell, which some would argue isn't real Mexican food, but I only enjoy one item on their menu anyway, so yeah. You get what I'm saying. But I had some boneless, skinless chicken breast (my fave!) on hand and I wanted to try something new. And marinated chicken has never steered me wrong. S...

Chocolate Banana Cheesecake Chimichangas

Chocolate Banana Cheesecake Chimichangas

Remember how a little less than a year ago, I discovered that I was terrible at rolling chimichangas ? Well, I can confidently say that I'm still terrible at rolling chimichangas. I would also like to add one more fact to the books, and that is, I'm even more terrible at frying them. I'm honestly terrified of frying things period, but I took a risk for this month's Mystery Dish . And while I didn't end up burning myself, I did scorch my chimichangas pretty badly. Thank goodness for powdered sugar. And the one chimichanga that managed to survive the war against hot oil by being the first one in and out of the skillet. The good news is, looks are usually deceiving, so even though these weren't rolled or fried correctly, they still tasted amazing. Because what combination of chocolate, cheescake, and banana wouldn't taste amazing? It's a match made in taste bud heaven.

So apparently, I'm not very good at rolling up chimichangas. Don't let the ones in the picture fool you. They were the only two that I managed to make look decent. I'm still not sure whether or not they're supposed to be rolled wide or long like burritos. Google images didn't really help, so if anyone can enlighten me, that would be great. Also, let me know whether or not you're supposed to roll up the bottom edge of the tortilla first and then fold in the sides, or vice versa. Anyways, even though I'm not good at rolling up chimichangas, it turns out that I'm really good at eating them. Like, really good . I wasn't aware that I had this skill because prior to making these, I had never had a chimichanga before. Booooy, was I missing out!

Homemade Crunchwrap Supreme

Homemade Crunchwrap Supreme

The moment I saw these homemade Crunchwrap Supremes on Pinterest , I knew right away I wanted to make them for the Super Bowl. Last year's Super Bowl cake was great, and while it would have been nice to make a better one, seeing as how I've gained a bit more experience in cake decorating, I knew that it would just end up sitting around the house for days, and then eventually, soaked in water and thrown outside to the birds. Don't get me wrong, my family loves cake, but they had way too much of it in the past month, so I needed to make something different. And seeing as how Mexican food is very popular during the Super Bowl (for some reason?), these Crunchwraps were perfect; they fit right in. My parents didn't raise us on fast food at all; never drove us through a single drive-thru, never even sat down with us at a single restaurant. It wasn't until we started driving that we took matters into our own hands--hitting up fast food joints like it was...

Tres Leches Cake

Tres Leches Cake

Three...um........um......yeah I'm going to have Google this. Apparently, three years of high school Spanish have failed me. Thank god Google never does. Leches or leche, pronounced "leh-cheh", means milk. Tres leches cake is a popular Latin American sponge cake that is soaked in a combination of three milks (evaporated milk, sweetened condensed milk, and heavy cream), hence the name- three milks cake. So even though I have never heard of a tres leches cake before nor do I know anyone who has tasted it, the moment I saw it on Pioneer Woman's page , it called out to me. I think it was the milk. I LOVE milk, like.. cannot get enough of it kind of love. I'm pretty sure I drink at least 3 to 4 glasses of milk a day. It's that serious. But you know what else I love now? Tres Leches cake. It is incredible. In the way it tastes AND in the way that it is completely saturated in three types of milk, but instead of being soggy, it holds it's textu...
