Rice w/ Vegetable Sauce


Bummed out that I couldn't make banana cupcakes today (because I found out at the last minute that we don't have baking cups), I settled for making dinner.

Print Friendly and PDF Ingredients:
1/2 (16oz) package of mixed vegetables
1 potato
3-4 garlic cloves
1 medium onion
1 (6oz) can of tomato paste
1 teaspoon of butter
1/4 teaspoon of black pepper
1/4 teaspoon of hot red pepper
1 teaspoon of salt
2 bay leaves
3-4tbsps. Oil
2 cups of Uncle Ben's long grain white rice

Directions:
Pour 1/2 of the package of mixed vegetables into a large saucepan. Add all spices, oil, and butter and sauté for 10 minutes.
Then add tomato paste and cover with vegetables with water. Bring to a boil, and then cook on low heat for 20 minutes.
Rice:
When the sauce is done cooking, pour most of it into a medium saucepan(try to get most of the vegetables out). Add 4 cups of water to the remaining sauce. Add ½ teaspoon of salt; when the water boils, add the rice. Stir for 5 minutes, then cook for 20 minutes.
Serve sauce over the rice.

  1. Don't let the lack of baking cups prevent you from making cupcakes. Spray the pans with a cooking spray that includes flour OR butter and flour the pans. They last about 2 days this way, but that's wayyyy longer than it takes to eat them! :)
