BaNilla Sandwich Cookies



Happy Monday everyone! I hope you all had an awesome weekend. Mine was exhausting. I attended a three-day ultrasound physics seminar to catch up on my CME credits and while the seminar itself was great, it required me to wake up abnormally early three days in a row and that was not fun. I am by no means a morning person. I also don't understand the concept of going to sleep early when you have to wake up early, so by Sunday, I was pooped and going on maybe 12 hours of sleep in 72 hours.

 
Nonetheless, I mustered up the little amount of energy I had left inside of me on Sunday and made these cookies. Guys, these cookies are as easy as easy gets. I don't even know if you can consider this a recipe because it's SO simple. All it is, is taking two mini Nilla wafer cookies, spreading some Nutella on them, sandwiching a banana slice between them, and then rolling them in sprinkles.


Definitely a lazy day dessert. And we all need to have a couple of those up our sleeve for when the occasion calls for it. These are perfect for a last minute thing because they literally have to be served soon after you assemble them, or else the sprinkles will start to bleed into the banana.


Also, there's the issue of the cookies getting soft. But wanna know a secret? My cookies were already soft because I've had this box of mini Nilla wafers since last October when I made these monkey cupcakes. Whatever chemistry happens when you open a bag of wafers and leave them open, happened. So, my cookie sandwiches were chewy, rather than crunchy, but still absolutely scrumptious.
 

BaNilla Sandwich Cookies

Ingredients:

bananas
Nutella
mini Nilla wafers
sprinkles


Directions:

Pair up Nilla wafers of the same size and set aside. Peel and slice banana(s) into 1/4-inch thick coins. Spread some Nutella onto the bottom of one Nilla wafer, place a banana slice on top of it, then spread some Nutella onto the other Nilla wafer, and place it on top of the banana slice, creating a sandwich. Pour sprinkles into a bowl; then roll the sandwich into the sprinkles until the sides are fully coated. 

Repeat for however many sandwiches you'd like to make!
