Oven Roasted Chicken with Potatoes


One bite of this dish and you'll fall in love. At least, that was the case for me. I was in my room studying, when a thick robust aroma of spices filled the air around me. I made my way down the stairs; the anticipation of a heavenly feast building inside of me. My stomach grumbled...okay let me get to the point. This dish is absolutely delicious. It's my sister-in-law's recipe, which by the way she made up all on her own. Ever since then, this dish has been a hit, and I just had to learn how to cook it :)

Oven Roasted Chicken with Potatoes

 Ingredients:
6 pieces of chicken
6 potatoes
2 onions- 1 for chicken, 1 for potatoes
10 cloves of garlic- 5 for chicken, 5 for potatoes
6 tablespoons of corn oil: 3 for chicken, 3 for potatoes
1 teaspoon salt(for each), 1/4 teaspoon cumin(for each), ¼ teaspoon black pepper(for each)

Directions:
WASH the chicken with lemon and salt. Place the chicken in a large saucepan, add all spices, and grate onion and garlic on top. Add oil.
Sauté for 15 minutes and then pour out into a large oven cooking tray. Leave it aside.
Repeat process for potatoes. When they are done, pour them onto the same tray, spreading them out over the chicken. Cover the tray with aluminum foil and cook for 1 hour.

  3. good recipe but i think it is a long process! i would mix all the ingredients and bake. just a suggestion to speed up the cooking time. but i am sure your sister's in law cooking sounds delicious!
    i know of a recipe that my mother in law used to make which consists of deep frying the potatoes , mix with raw chicken in a pan and then bake with lots of spices and a chicken cube plus water, baking until the water amount is reduced to about half...adding lemon juice at the end of the baking time...it was delicious, too much time to prepare but worth the fatty great taste!
    i might cook it one day and post it on my blog too.
