Anyways, my mother, who usually hates when I bake because of the mess I make in the kitchen, was actually pushing me into the kitchen to make these. She had also quickly became a fan of these cookies once she tasted them; plus, my father happens to be a big fan of oatmeal raisin cookies, so she knew for sure he would love these.
It was nice making something semi-healthy for a change. Especially after that calorie packed Superbowl cake last week. According to the Ocean Spray bag of dried cranberries, 1/3 cup of cranberries is equivalent to 1 serving of fruit. So, depending on how many of these cookies you eat, you're getting a full serving of fruit. AND, the oats have fiber and a whole bunch of other vitamins, so that's a double whammy of healthiness. It's kind of like a granola bar, that has taken cookie form, is lighter, and tastes better. The cranberries give the cookie a tarty taste, and the white chocolate chips give it a punch of sweetness. Finish it off with a tall, cold glass of skim milk, and you won't feel so bad about not having hit the gym in more than a month :)

Oatmeal-Cranberry White Chocolate Chip Cookies
2/3 cup butter, softened3/4 cup firmly packed brown sugar
2/3 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1 and 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 tablespoons milk
3 cups oats (quick or old fashioned, uncooked)
2/3 cup white chocolate chips or chunks
1 cup dried cranberries
Directions:
Heat oven to 350°F.
In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and milk and mix well. Fold in cranberries and white chocolate chips.
Drop dough by rounded tablespoonfuls onto cookie sheets lined with parchment paper.Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
