Shaheen's Oatmeal-Cranberry White Chocolate Chip Cookies



Now say that five times fast. Or, just read the rest of this blog post and find out how to make them. Assuming most of you will choose the latter, or choose both, I'll continue writing. The first time I devoured tasted these cookies was at a potluck. And naturally, I ran up to the girl who made them and asked for the recipe. I have to say, I'm glad I'm friends with non-stingy people; I really never understood why there are some people out there who refuse to give you their recipes. Like seriously, spread the love. Are you afraid that I'll make it better than you? Because you should be. Just kidding. I mean, I don't know why else you wouldn't want to give someone else your recipe. I guess I understand if it's something you created yourself. But if it's not, then you're just being stingy for no reason. 


Anyways, my mother, who usually hates when I bake because of the mess I make in the kitchen, was actually pushing me into the kitchen to make these. She had also quickly became a fan of these cookies once she tasted them; plus, my father happens to be a big fan of oatmeal raisin cookies, so she knew for sure he would love these.

It was nice making something semi-healthy for a change. Especially after that calorie packed Superbowl cake last week. According to the Ocean Spray bag of dried cranberries, 1/3 cup of cranberries is equivalent to 1 serving of fruit. So, depending on how many of these cookies you eat, you're getting a full serving of fruit. AND, the oats have fiber and a whole bunch of other vitamins, so that's a double whammy of healthiness. It's kind of like a granola bar, that has taken cookie form, is lighter, and tastes better. The cranberries give the cookie a tarty taste, and the white chocolate chips give it a punch of sweetness. Finish it off with a tall, cold glass of skim milk, and you won't feel so bad about not having hit the gym in more than a month :)

Oatmeal-Cranberry White Chocolate Chip Cookies

Ingredients:

2/3 cup butter, softened
3/4 cup firmly packed brown sugar
2/3 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 and 1/2 cups all-purpose flour
1 teaspoon baking soda
1 and 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 tablespoons milk
3 cups oats (quick or old fashioned, uncooked)
2/3 cup white chocolate chips or chunks
1 cup dried cranberries

Directions:

Heat oven to 350°F.

In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and milk and mix well. Fold in cranberries and white chocolate chips.

Drop dough by rounded tablespoonfuls onto cookie sheets lined with parchment paper.

Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

  2. i'm glad you liked them enough to make a post out of them =) there were many many trials and tweaks before i came up with this recipe..good to see it comes out well for others too!
