Snickers Brownie Cookies



I know something that you don't know. And I'm not gonna tell you. Okay fine, I am. You know I love y'all too much to keep anything from you. Especially not something like this. This....is solid gold right here. Are you ready?

You can make cookies...

...out of brownie mix!


I know, I KNOW. Your mind is blown. Mine was too. How I never realized you could do this when I've made cookies out of cake mix before is beyond me. But I'm so glad that I know now, and it took me maybe half a second after finding out to get in my car and go buy a box of brownie mix so I could make these cookies.

It took me a little while longer though to try to figure out what exactly I wanted to put in the cookies. Mini Reese's peanut butter cups? Mini Rolos? Reese's pieces? Twix bars? So many different options--but I ended up settling on some Snickers bars...and a Twix bar to snack on while making the cookies ;)


Four ingredients and 20 minutes later, I had these beauties in front of me. Now if you're lucky, when you make these (cause you will make these), you'll end up with a couple of beauties like these in your batch.


These are the real beauties. The ones with the caramel oozing all out the sides. Gawwwgeous. And the best part about these is that since the caramel hardens, it adds the perfect crunch to the cookie. Ohh, you will love it.


But if your teeth can't handle the crunch, or you just prefer something soft and chewy, then you can stick to the regular beauties. They're just as amazing.


You've got the richness and fudginess of a brownie in cookie form, plus an added "oomph" from the bits of Snickers studded throughout. Straight up taste bud heaven.


And you know, it doesn't always have to be Snickers. You can throw in whatever you like in the dough. The variations are endless. I bet you could even make some pretty gnarly whoopie pies using this cookie base.

Snickers Brownie Cookies

Yield: 18-20 cookies

Ingredients:

1 box brownie mix
1/3 cup oil
2 eggs
3 Snickers bars, chopped (I used 2, but I think the cookies could use one more)


Directions:

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper; set aside.

Sift brownie mix into the bowl of a stand mixer fitted with a paddle attachment. Add oil and eggs, and beat on medium speed until everything is incorporated and a soft dough forms. Stir in chopped Snickers bars. 

Drop dough by rounded tablespoons onto parchment-lined baking sheet. Bake for 11-13 minutes, until cookies have a crackled appearance on top. Let stand on baking sheet for 1 minute, then transfer to a wire rack to cool completely.
