Remember when I complained that taking pictures of ice cream was hard? Well, ice cream is a breeze compared to popsicles, y'all. I was not ready for this. But even though my big dreams of taking perfect popsicle pictures were shattered, I didn't let that stop me from sharing these with you today. Because quite frankly, these popsicles NEEDED to be shared. They are too good to be true. And I'll tell you why. They are basically fudgesicles, like the ones you all probably had growing up during the summertime. Except, they don't have any high fructose corn syrup. There's no bad ingredients in them at all. God bless the person who discovered no-churn ice cream. Because of them, I am riding high on the popularity chart with my nephews. Just today, one of them called me "professional ice cream maker". That's not a title that you can hand off to just anybody. That takes serious love and commitment. And it's all because of this no-churn ice cream I've been cranking out. It's so easy, it just makes you want to make it over and over again. My nephews have even taken to requesting their own flavors from me. Some of them are just into plain vanilla, others like a little something extra. Cookies and cream is a flavor none of them can resist. A week or so ago, I shared this peach cobbler ice cream which was of course, as amazing as it sounds. So amazing, I decided to continue on with the trend of favorite summer desserts, and I created this strawberry shortcake ice cream, complete with fresh strawberries and delicious bits of pound cake.
Remember when you had to have your peach cobbler with a side of ice cream? Pfft. That was lame. Struggling to get the perfect proportion of ice cream on the spoon while it melted away on the warm cobbler, and ending up with one big soupy mess. Well, you don't have to worry about that anymore. I have reinvented how we eat peach cobbler by creating a peach cobbler ice cream. YASSSS (as all the cool kids are saying). And in reinventing how we eat peach cobbler, I invented one of the most delicious ice cream flavors to ever exist. In my opinion, that is. I would definitely trust my opinion though, because I eat A LOT of ice cream. Just ask my family, the freezer is never empty. So, I know what the good stuff is. And this.is.it. One taste of this ice cream and you will be screaming for more. Just don't scream too loud because if someone else hears you, you'll have to share. And that would be a truly terrible thing.
So, remember how I told you guys I don't like coffee? Well, that was before I discovered iced coffee. Iced coffee is totally my thing. The other day, I went to Dunkin Donuts to grab my usual caramel mocha swirl, but ended up getting the new, limited edition pumpkin creme brulee instead. It was good, but not as good as my beloved caramel mocha. It did, however, inspire me to create a COOL pumpkin treat for you guys, while I still can! Fall is only two weeks away, but it doesn't really feel like it considering all the blazing hot, humid temperatures we've been getting. Since when is September a hotter month than August? There are some crazy things going on up there in our atmosphere, I wonder what's in store for our winter.

The last few days of Ramadan were so stressful and there were so many things that I needed to get done in such a short amount of time that I barely got any sleep. When you get in your car and your glasses fog up from how HOT it is, you know it's time to start cranking out some no-bake treats! Who's with me? Today I've got for you the perfect no-bake treat to kick off your summer. Frozen. Yogurt. Yes, that's right. You can now enjoy this popular delicacy without having to leave your own home. Isn't that just music to your ears? Well, it gets better. You only need five ingredients! Peaches, yogurt, honey, vanilla, and lemon juice. Any fruit could work actually, but peaches were a part of this month's Mystery Dish ingredient list that I created, so that's what I went with. Now if you stop at these five ingredients, you have a creamy, fabulous peach frozen yogurt. Which is good. But great is better right? I scream, you scream, we all scream for frozen strawberries and cream bars! The reason that we're not screaming for actual ice cream is because I do not own an ice cream maker. So while all the other bloggers out there are coming up with fancy ice cream flavors, I'm over here trying to come up with no-ice-cream-maker-required treats for you and I to enjoy. I think I'm doing a good job so far. Two months ago (wow, does time fly!), I shared with you guys this strawberry banana ice cream which I think you guys enjoyed quite a bit, mostly because of it's simplicity and guilt-free-ness. Well, today, we're kicking the skill level up a notch and adding a whole lot more ingredients that won't be so friendly to your waistline...but they'll be worth it.
So I'm just gonna go right ahead and say that these didn't exactly turn out the way I hoped they would. That melty mess you see up there is actually supposed to be a group of beautiful ice cream topped brownie bites coated in magic shell. But due to technical difficulties I ran into, it's not. And rather than be ashamed of my epic failure, I am flaunting it for you all to see because I think it's absolutely hilarious. I'm not exactly sure what went wrong. But if I had to take an educated guess, I would say it was probably the ice cream. I used Breyer brand, and I did notice when I was topping the brownies that it was sort of watery and got melty really quick. But I didn't think much of it since I was going to freeze the bites anyway. Looking back on it now, that probably should have been a warning sign. As soon as I dipped my first frozen brownie bite into the magic shell coating, the edges of the ice cream melted and didn't get coated properly....
Yup, that's right. Two ingredients. You did not read that wrong. And for the record, neither of those two ingredients are cream or sugar. Mindblown yet? How about if I tell you that you don't even need an ice cream maker? Oh yeah. Now we're talking. This miracle ice cream, as I like to call it, only requires strawberries, bananas, and a food processor. It's as simple as freezing your fruits for an hour or two, until they're frozen solid, and then blending them together in the food processor until you achieve a perfect, soft-serve consistency ice cream. That's all there is to it.
