..and the egg yolk saga continues. I wasn't kidding when I said I had tons of egg yolks leftover from my macaron trials. Naturally, the next thing to make after eclairs was creme brulee! Y'all, ever since I learned how to make creme brulee -- and I use the word learned very loosely here since there are so few steps and they are all super easy! But ever since I figured out how easy it was to make, it's my second favorite dessert to serve when I have guests. Lava cakes will always be the first. Since matcha has been trending in bakeries and coffee shops all over the world, I put a twist on my classic creme brulee to make it matcha-flavored. Be sure to pick up culinary grade matcha if you are going to make these; it is specifically designed for baking and has a slightly different flavor profile that goes better with these ingredients! Life hack: if you ever find yourself with tons of egg yolks after a week full of baking macarons, just make eclairs. Cream and/or custard fillings always require multiple egg yolks so there was no question about what recipe I was making this week. And seeing as how we are a few short days away from the greenest holiday of the year, I knew I had to throw in some pistachios. Chocolate and pistachios are always a killer combination together. The perfect harmony of salty and sweet. For the pasty cream to be truly pistachio-flavored, I had to make my own pistachio paste. It is actually easier than it sounds; as long as you have patience and a high powered blender or a food processor. The pistachio paste gets cooked into the pastry cream and gives it a beautiful nutty flavor and mint hue. No food coloring necessary. Have you ever wondered how to make tiramisu better? Well, wonder no more. I have figured it out for you all. Add hazelnut syrup, Nutella, and chocolate chips. This is probably one of my best ideas yet. And I owe it all to Ramadan. So, it seems that this time of the year, peppermint is a really popular flavor. Personally, I have to admit, I am not a fan, b ut when I saw this bag of M&Ms at my local supermarket, I was instantly inspired to bake something with it. So, we turned back our clocks last week and I was NOT ready for that. I mean, is any food blogger ever really ready for that drastic one hour loss of natural lighting? It's devastating, every single time. And especially for those who aren't full time bloggers, like myself, I'm struggling to find time in my days to bake and photograph. Thankfully, cream puffs are something you can prep for ahead of time. I made this delicious pumpkin cream filling, as well as the phenomenal maple caramel sauce a day before. So, all that was left to do was to bake some pate-a -choux, and fill 'em up. I usually pipe my pate-a-choux with a bag, but I recently discovered that a cookie scoop does the job just as well. I've had this recipe bookmarked for ages and I JUST stumbled upon it again--- it was hiding in my iPad's favorites! I remember thinking that I needed to buy coconut flour to make it, which is funny, because now that I have bought coconut flour, it's been in my pantry for months and I'm just like, what do I do with it? I was so excited to get my hands on this machine, and ironically, it's not because I drink coffee.
