Paleo Pumpkin Chocolate Chip Pancakes

Breakfast is the most important meal of the day and yet I just can't get myself to have an appetite in the morning. Actually, let me rephrase that. I can't get myself to eat anything savory or good for me in the morning- like eggs, avocado toast, some sort of protein, etc. But sweet, I can always do sweet. Sweet iced coffee.  Sweet donuts. Sweet pancakes. Sweet waffles. I am always in the mood for sugar. So, I decided that I am going to trick my body into eating a healthy breakfast. Cue these pumpkin pancakes. I guess I can't call them healthy per se, but they are healthier because they are grain-free. And they're so delicious on their own, you don't even really need any additional toppings. Plus, they have eggs IN them. 4 eggs, to be precise. Not only am I getting my recommended egg serving, but the eggs help these pancakes to rise up and not be so dense, which can be an issue for many paleo baked goods. I did it. I gave in to the red food coloring. It had to be done. Valentine's Day just isn't complete without at least ONE red velvet recipe. And I've got the best one for you. Pancakes, red velvet pancakes. And not just any red velvet pancakes, heart-shaped red velvet pancakes. Because circles are so boring, right? Not romantic at all. I intended to bake them as hearts, but alas, the batter was too runny. But no worries, my heart shaped cookie cutter came right in handy. And obviously, I ate all the leftover scraps. In the future, I would use a bigger cookie cutter but that's not to say these mini hearts aren't the cutest!

The verdict is in y'all! I finally tried Biscoff spread and I thought it was...okay. I wouldn't say I'm disappointed, though the blogosphere did really hype it up for me. I'm more just, unimpressed. Don't get me wrong, it's not BAD. It's just not amazing. Basically, I love Nutella and I'm #TeamNutella all the way. BUT, for those of you who are in love with the Biscoff, I've got just the pancakes for you. A spin on the traditional buttermilk pancake, these pancakes encompass that cookie butter flavor you all adore so much. They're fluffy, super tender, and are made with white whole-wheat flour for a hearty, healthy breakfast. Did you know that Biscoff cookie spread actually has no preservatives, artificial colors, or GMO ingredients? And it's vegan and nut-free! You learn something new every day. So, who went to IHOP yesterday and got themselves some free pancakes?! Not me. I wanted to go and I have went every year since I've heard about said glorious day, but this year, I had to sit it out due to previous obligations. Pancakes are back! It's been what, nine months since my last pancake recipe ? Yeah, definitely way too long. You guys need breakfast options! And I'm giving you what may be the best option of all today. I'm giving you pancakes that are prepared...the night before! Yes, you read that correctly. The batter stays in your fridge overnight to develop and what not. And then you can roll right out of bed the next morning, turn your skillet/griddle on, and get to cooking. How amazing does that sound? And that's not all. With that extra time you have on your hands from not having to find/mix all your pancake ingredients in the morning, you can make the most delicious Nutella syrup, which complements these moist and fluffy pancakes fantastically, if I do say so myself.

In my opinion, the measure of how much you love someone is proportionally related to how much sleep you're willing to sacrifice for them. For example, I am willing to wake up at 8:00 am on the first Saturday of every month just so I could take my dear nephews to their beloved Home Depot Kids Workshop. *RECIPE HAS BEEN UPDATED HERE . I woke up last Saturday morning to the smell of pancakes, wafting up to my bedroom. I haven’t had pancakes in the longest time so you can just imagine my salivating mouth..Okay scratch that. That’s a disgusting thing to imagine. But you get my point.   One bite of those warm pancakes drenched in Aunt Jemima’s syrup and I was in heaven.  There is absolutely nothing like my mother’s homemade pancakes. This morning, I was really craving for some of those pancakes again, so my mother gave me the recipe and I got to making them. Soon, the whole entire house smelled like pancakes.
