Shakshoukeh شكشوكة

The Algerian version of Shakshoukeh is very similar to other versions, except the ingredients are not fried; thus making this version, a tad bit healthier than all the others.


Shakshoukeh

Ingredients:

3 green peppers
3 tomatoes
4-5 garlic cloves  
5 tablespoons corn oil  
1/8 teaspoon black pepper
1/8 teaspoon crushed red pepper
1/2 teaspoon salt
2 teaspoons paprika  
5 potatoes
¼ cup of water  
1 egg
¼ teaspoon salt


Directions:  

Wash the green peppers and the tomatoes. Chop into small pieces. Put the chopped peppers and tomatoes into a pot. Grate the garlic over them. Add the oil, and the spices, and sauté for about 20 minutes.

Meanwhile, peel the potatoes and chop them into small cubes. Add them to the pot, and add ¼ cup of water and 1/4 teaspoon salt.

Cook for about ½ hour or until the potatoes are ready.>When the potatoes are done, crack an egg over them and stir continuously for about 5 more minutes.
