Healthy Chocolate Chip Oatmeal Waffles


So...it's been a while. I know, I know. I tend to occasionally disappear from the blog without any explanation. I don't mean to do it, but life just gets so hectic sometimes. I seriously applaud all the food bloggers out there who have full-time jobs and families and still manage to keep things running smoothly. I work part-time and have no kids and still find myself with no time!
I don't even know where March went but I was out of town for exactly 17 days (yes, I counted because I was away from my husband) and then the rest of the days vanished into thin air. And then it was April, but to be honest, April really feels like January in Ohio because as I write this, white flurries are coming down from the sky at an alarming speed. Like, what is life?
And even if we have miraculously gotten ONE day that feels like Spring, we get an entire week after that of just the most depressing weather ever. I can't really say it's just an Ohio thing though because while I was in Jersey we had a thunder snowstorm which is definitely as scary as it sounds. But enough about the weather, let's talk waffles!
In the time I spent away from the blog, I watched quite a few documentaries on Netflix which have convinced me that a vegan lifestyle is the way to go. So, I'm excited to share with you all dessert recipes that reflect that, but I'm not going to be changing the entire focus of the blog. I know some of you may still love your dairy/eggs and I myself will find it hard to completely eliminate them from my diet but I would like to try my best.
Enter these gluten-free, almost vegan, and sugar-free waffles. I came across the recipe on The Healthy Maven and I knew I absolutely had to try it. Even though breakfast foods are my favorite food group, I am always on the go and never really get a chance to make or enjoy them.
But I'm so glad I took the time to make these wholesome waffles today because they were amazing. Since they are made with oat flour, they are high in protein and extremely filling. The banana provides the majority of the sweetness and the chocolate chips add to it. You'll notice I doubled the amount of chocolate chips from the original recipe; totally on purpose and totally the right decision.

Shout out to my in-laws for whom I would not have been able to make these without their handy dandy waffle maker!

Healthy Chocolate Chip Oatmeal Waffles

Yield: 3-4 waffles

Ingredients:

2 cups oat flour
2 tablespoons coconut flour
2 teaspoons baking powder
pinch of salt
1 banana, mashed
1/4 cup coconut oil, melted
1 large egg
1 cup unsweetened almond milk
1 teaspoon vanilla extract
1/3 cup vegan mini chocolate chips

Directions:

In a large bowl, whisk together oat flour, coconut flour, baking powder, and salt. Set aside. In a smaller bowl, whisk together mashed banana, coconut oil, egg, almond milk, and vanilla extract.

Stir wet ingredients into dry ingredients to combine. Fold in chocolate chips. Set batter aside for 5 minutes.

Preheat waffle maker. Spray with non-stick cooking spray or coconut oil.

If batter has thickened up a lot while resting, add about 1/4 cup of almond milk to thin it out. Pour about 1/2 cup of batter into preheated waffle maker and evenly spread it out. Cook according to waffle maker instructions.

Repeat until all of the batter is used. Serve immediately with fresh fruit and/or maple syrup.
